You wind up with a house that smells incredible and succulent zuccini bread that is to die for! I’ve been too busy making bread and freezing it to enjoy this winter to make cards, so I thought I’d share what I’ve been doing.
I say my “famous” zuccini bread because that’s what my granddaughter, Savannah, calls it! Really, this is the BEST zuccini bread ever! Here’s the recipe (and you thought all I did was make cards!):
Zuccini Bread:
3 cups of flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
3 teaspoons of cinnamon
3 eggs
2 cups sugar
1 cup oil
2 cups grated raw zucchini (use the outside skin and all – just wash real well and scoop out the seeds from inside real well)
2 teaspoons vanilla
1 cup chopped walnuts
Combine flour, salt, baking soda, baking powder and cinnamon – set aside.
Beat eggs until light. Stir in sugar, oil, zucchini and vanilla.
Add dry ingredients and then the nuts.
Pour into greased and floured pans.
Bake in 350̊ F oven for 1 hour.
Makes 2 yummy loaves. Don’t think about the calories. I have tried various things to make it lighten it up (such as applesauce instead of oil, sugar substitutes, etc.), but it sacrifices the taste, so suck it up and enjoy the full flavor this recipe produces. You could even put in some white or dark chocolate chips or some cranberries in it too instead of the walnuts as a change for ideas. This makes the house smell devine as it is cooking too!
